Restaurant's Heirs Dish Up Favorite Mostaccioli Recipe

Article excerpt

IN JANUARY, Pat Marshall of Ferguson wrote in search of a recipe from the old Hendrickson's Cafeteria in north St. Louis.

We waited three months, then returned her stamped, self-addressed envelope with a note telling her that no one had replied.

Recently, however, we received the recipe - from Hendrickson's itself. Michael Schinker explained that his company now markets Hendrickson's Unique Dressing and Seasoning, which was created in the 1930s and was used extensively in the cafeteria in the 1940s and 1950s.

He enclosed the mostaccioli recipe that Marshall requested, which we are printing here. We hope she sees it today, as we no longer have her address.

Schinker also passed along some recipes that use the dressing, which is fat-free and sold at groceries. For a free copy of those recipes, send a stamped, self-addressed envelope to Hendrickson's Unique Dressings, 2046 Belle Avenue, Jennings, Mo. 63136.

HENDRICKSON'S

MOSTACCIOLI

3 tablespoons vegetable oil

1/2 cup chopped onion

1/2 cup chopped green bell pepper

1 teaspoon minced garlic

1 pound ground beef

3 teaspoons salt

1 teaspoon ground black pepper

1 tablespoon chili powder

1 (6-ounce) can tomato paste

1 (14.5-ounce) can whole tomatoes, chopped or crushed, undrained

1 tablespoon Worcestershire sauce

Grated Parmesan or American cheese

4 cups cooked mostaccioli noodles

Combine oil, onion, bell pepper and garlic in a pot; cook about 5 minutes, stirring to keep from burning.

Add ground beef, salt and pepper; simmer until thoroughly cooked. Mash hamburger while cooking until it's in fine pieces.

Stir chili powder into meat. Add tomato paste, 1 1/2 cups water and tomatoes. Let boil 15 minutes. Add Worcestershire sauce.

Add sauce to cooked noodles. Sprinkle with Parmesan cheese.

Yield: About 6 servings.
