Use No-Fail Meringue to Crown a Winning Lemon Pie

A: More than 20 people sent recipes for pies and meringue. Barbara Brook of Creve Coeur found the following recipe years ago in Ann Landers' column, and it's become a family favorite. "I have never written to Ann Landers to thank her, but I should have as I'll be forever grateful to her!" she said. NEVER-FAIL MERINGUE 1 tablespoon cornstarch 2 tablespoons cold water 1/2 cup boiling water 3 egg whites 6 tablespoons granulated sugar 1 pinch salt 1 teaspoon vanilla Blend cornstarch and cold water in a saucepan. Add boiling water and cook, stirring, until clear and thickened. Let stand until completely cool. Preheat oven to 350 degrees. With electric beater at high speed, beat egg whites until foamy. Gradually add sugar and beat until stiff but not dry. Turn mixer to low speed; add salt and vanilla. Gradually beat in cold cornstarch mixture. Turn mixer again to high speed and beat well. Spread meringue over cooled pie filling. Bake for about 10 minutes. This meringue cuts beautifully and never gets sticky. Yield: 8 servings. FOOLPROOF MERINGUE 3 egg whites 1 dash salt 3-1/2 ounces marshmallow cream Preheat oven to 350 degrees. Beat egg whites and salt until soft peaks form. Gradually add marshmallow cream, beating until stiff peaks form. Spread over pie filling. Bake for 12 to 15 minutes or until golden brown. Yield: 8 servings.
