I don't know how it happens. I buy a bunch of sunny yellow bananas, I hang them on my banana hook, I turn around five minutes later and they have magically, mysteriously turned ripe. As in brown spots and slightly squishy and nobody in the house will touch them with a 10-foot pole ripe. All of this would be highly frustrating if there weren't so many things you can make with ripe, squishy bananas. Good old banana bread is of course the recipe that springs to mind first, but recently I decided to stretch the banana boundaries a little ... with some banana chocolate chip coffee cupcakes.

First things first for those of you who are wondering about the title of this recipe: there is no actual coffee in the recipe. No, the "coffee" part comes from the fact that these are cupcake versions of coffee cake. As in, cake that you eat with coffee. Or even more confusingly, tea, which is my caffeinated drink of choice. Are we all thoroughly mixed up at this point? You're welcome.

And while they don't contain any coffee, they do have a conglomeration of other delicious ingredients, such as banana (of course!) and chocolate chips and butter and sour cream and cinnamon sugar. They have a chocolate walnut center that will make you so happy that you won't really notice whatever it is you are drinking alongside them anyway. They are also almost as quick and easy to make as that cup of coffee or tea, which is both wonderful and a little dangerous.

A couple of handy hints about making these cupcakes: I have tried baking them with cupcake liners and without, and while they are fine either way, I find that they are little more moist and tender with the liners. And hint number two: using a cookie scoop to put the dough in the liners will make this recipe go even more quickly and with minimal mess. Love my cookie scoop!

It's totally worth getting yourself a bunch of bananas and letting them get too ripe on purpose, if you don't have an innate talent for that happening automatically, the way I do. …
