Bacon Rules over New Food Offerings at Busch Stadium

Every year, the traditions are the same, but some of the names are new. Jason Heyward. Jordan Walden. Extreme Bacon Sandwich.

The crowds that descend on Busch Stadium Monday and throughout the baseball season will find a host of new foods at the concession stands. These new offerings are not the kinds of things they will want to tell their cardiologist about, but it is a baseball stadium. Baseball stadiums are not for the healthy.

If they want healthy, there are still a smattering of healthful items throughout the stadium: stir-fry stations, a gluten-free zone, a grill serving up fish tacos and the Farmers Market concession stand with fresh fruit, sandwiches and other snacks.

But for the season's newest items, bacon is king. In fact, a concession stand on the Main Concourse and a cart on Level 4 will both be called All About the Bacon and will feature offerings noted for their unusually high bacon content, said Larry Johnson, executive chef for Delaware North Sportservice, which makes the food throughout the stadium.

Perhaps the most bacony item is the Extreme Bacon Sandwich, a slice of barbecue-spiced ground pork wrapped in applewood-smoked bacon and stuffed with cheddar cheese and more bacon, glazed with barbecue sauce and drizzled with barbecue aioli, served on a locally baked Hawaiian bun. It will be accompanied by a bag of maple bacon- flavored potato chips for $12.

Also at the All About the Bacon locations will be the new bacon- cheddar bratwurst for $6.50, a locally produced bratwurst stuffed with chopped bacon and cheddar cheese, topped with barbecue sauce and served on a bun. It's all part of what Johnson said was an effort to offer new and trend-conscious variations on standard stadium fare.

"We keep it interesting and fun but still try to keep a ballpark feel to it," he said.

With new waffle sandwiches, the chefs are borrowing from the current craze for fried chicken and waffles. Two Belgian waffles will sandwich a choice of three fillings: fried chicken breast with maple bacon gravy; chicken carnitas with bacon, pico de gallo and ranch dressing; or barbecued pulled pork with coleslaw and barbecue sauce. Served with a mound of tater tots in a white queso cheese sauce on the side, the $15 meal will come in a cardboard container in the shape of home plate. …
