A * Creamy spinach, applewood bacon, thinly sliced grilled chicken pieces topped with melted cheeses and sliced green onions make the flatbread at Bravo! Cucina Italiana a customer favorite. The thin crust of house-made lavash bakes crisp and light. The chefs have created a just-right balance of flatbread to topping to showcase the flavors of each at the Italian-inspired West County restaurant.

The same toppings and crust are available in a 10-inch pizza. According to General Manager Chris Hardy both are customer favorites. Customers often order a flatbread with a specialty salad for a light and filling lunch.

The lavash flatbreads and pizza crusts are specially made for the Bravo! Cucina restaurants, as is the spinach dip. The popular West County restaurant is part of a the Bravo Brio Restaurant Group, a national chain of 130 restaurants including Bravo! Cucina Italiana, Brio Tuscan Grill and Bon Vie Bistro.

This dish isn't difficult to make at home. The lavash we found was a bit thinner than the crust at Bravo! Cucina. A deli-made spinach dip delivered the best flavor as opposed to a jarred dip. The recipe comes together in minutes. Even in summer's heat, the short bake time in the oven worked well, a quick and easy dish.

Making the flatbread on the grill works, too, with a pizza stone and a peel to remove the crust after crisping and to replace it after the topping is in place. Timing is crucial on the grill. One or two minutes too long and the lavash can burn.

Easier still, visit Bravo! Cucina for lunch or dinner to taste test the flatbread before you make it. The restaurant includes an airy dining room for lunches, dinners and weekend brunches, a bar for after-work happy hours and a patio designed to enjoy menu favorites day-to-night.
