Special Request: Bixby's German Potato Salad Follows Tradition

A * Bixby's birds-eye view of Forest Park from the History Museum's second floor is one of St. Louis' greatest pleasures. Just ask Corey Ellsworth, Bixby's new executive chef. "I'd heard such good things about Bixby's, at first I felt intimidated," he says. "Now I want to make it even better."

Earlier this month, Ellsworth introduced his second all-new seasonal menu and is pleased with its direction toward lighter lunch fare and fresh ingredients from local sources. "Guests aren't looking for a big heavy meal anymore."

Bixby's, he's recognized, is a lunch place (it's open for lunch Monday through Saturday and brunch on Sunday), so his aim is to use summer fruits and vegetables in approachable but current ways. On the summer menu are a melon and buttermilk gazpacho, a Margherita- style flatbread, a beef tenderloin and garden tomato salad.

Guests, he says, are a mix of people who live nearby, friends enjoying lunch out and business clientele and museum goers, of course. The museum's newest exhibit, A Walk in 1875 St. Louis, uses a large-scale hand-drafted pictorial map from the 1870s to immerse visitors in a streetscape of the city's streets, factories, buildings and homes. It is, Ellsworth says, "great for business."

Bixby's German Potato Salad follows tradition, chunks of potato coated in a sweet and sour bacon dressing served warm or at room temperature. To replicate Bixby's German Potato Salad, Ellsworth says to reduce the sauce until it coats the potatoes. "This concentrates the flavors; the sauce should be thick, not runny."

Usually German Potato Salad is one of several sides Bixby's keeps in rotation. This week only, it is available at lunch all week through Saturday.
