THE Manchester Food & Drink Festival kicks off properly today with dozens of special events happening in the week or so ahead, as well as daily live music and pop up drinking and dining on Albert Square right through to September 20.

But we thought it was time we picked out a few things that you must not miss in the programme - starting with highlighting the influx of top notch chefs heading to Manchester for the festival.

The go-to event for some expert culinary advice has to be this year's free Live Cookery Theatre - on the Festival Hub on Saturday 12th and Saturday 19th.

The schedule on September 12 goes like this: 1pm: Olia Hercules - Ukrainian-born chef who learned her craft at Leith's and Ottolenghi and is also a recipe writer (look up her cookbook Mamushka) and food stylist. Named as Observer Rising Star of 2015 in the food category, Olia makes dishes such as gherkin, beef & barley broth and garlicky Georgian poussins with spicy plum chutney.

3pm: Adam Reid - Simon Rogan, the mastermind behind The French and Mr Cooper's, at The Midland, and two Michelin starred L'Enclume, in the Lake District, has had to pull out of this slot for personal reasons. But his trusty head chef at The Midland, Adam Reid, takes his place.

Reid joined Rogan in 2013 after experience at Brockencote Hall in Worcestershire, as well as the Michelin-starred Chester Grosvenor hotel.

5pm: Aiden Byrne - Main man at Manchester House, Liverpudlian Byrne has been head chef at a string of Michelinstarred restaurants, and scooped a hat-trick of triumphs at the 2014 Manchester Food and Drink Awards for Best Restaurant, Best Bar and Best Newcomer.

On September 19, you can catch this lot: 1pm: Cesar Garcia - Iberica head chef Garcia worked alongside Michelinstarred exec chef Nacho Manzano for many years, and his culinary philosophy is all about the finest Spanish produce. …
