THE FARMER'S TABLE ; Slow Cooker Pumpkin Bread Pudding

Evening temperatures are getting cooler. I'm beginning to think about autumn comfort foods. There are so many seasonal tasks to be done before winter sets in, and this is the time I like to pull out my slow cooker and put it to work. It simplifies cooking preparations and helps to warm up my chilly kitchen. Slow cooker recipes offer convenience that can't be matched at this time of year.

This is the season to celebrate pumpkin in my town, home to the West Virginia Pumpkin Festival. I am one of those people who enjoy "pumpkin-everything. I like the scent of pumpkin spices, pumpkin- flavored coffee, pumpkin bread, donuts, cookies, rolls, pumpkin soup and pasta, and roasted pumpkin slices.

Usually we grow a few pumpkin plants, so we can make a few jack- o-lanterns for Halloween. I like to cook down one or two small pie pumpkins for holiday pie fillings. The puree will keep in the freezer for 6 to 8 months.
