Pan haggerty Boil 1kg cubed potatoes for about 10-12 minutes or until just tender, adding shredded green cabbage for the last 4 minutes. Drain, return to the saucepan and leave to cool. Spray a large non-stick ovenproof frying pan with low-calorie cooking spray and place over a medium-low heat. Add two finely sliced onions and fry for 10 minutes, adding 2 crushed cloves of garlic for the last 2 minutes.

Preheat the oven to 180 [degrees]C/Fan 160 [degrees]C/Gas 4. Add the onions and garlic to the potatoes and cabbage in the saucepan and stir in 225g diced lean ham (visible fat removed) and 2 lightly beaten eggs. Season and mix well.

Spray the frying pan with more low-calorie cooking spray and spoon in the potato mixture, pressing down lightly.

Fry for 5 minutes over a medium heat then transfer the frying pan to the oven and bake for 20 minutes or until lightly golden.

This is delicious served hot with salad. Serves four.
