THE FARMER'S TABLE ; Thai Green Curry

I was introduced to Thai cuisine when I was a student at Glenville State College. The school had five international students at the time and they were all from Thailand. The college was a "suitcase school, and most of the students went home on the weekends. I lived too far away to make weekend trips, so I spent many lonely weekends on campus with the Thai students and a few returning Vietnam veterans who were studying on the GI Bill.

The Thai students received occasional packages from home containing ingredients for favorite dishes. Sometimes I was invited me to their apartment for weekend dinners.

The dishes were aromatic, savory and spicy hot. There were yellow, red and green curries. The green curry has remained a favorite throughout the years.

Green curry paste can be made from scratch, but some of the ingredients are difficult to find locally. …
