BUFFALO CAULIFLOWER

Whisk 2 cups each flour and seltzer water with 1 teaspoon kosher salt. Cut 1 small head cauliflower into 1-inch florets; dip in the batter. Deep-fry in vegetable oil, until golden brown. Toss with 1 stick melted butter whisked with cup Buffalo hot sauce. Serve with blue cheese dressing. Makes 12.
