5 tablespoons butter, divided

2 tablespoons all-purpose flour

1 cup milk or light cream

teaspoon salt

1/8 teaspoon black pepper

1 tablespoon minced onion

cup white wine

1 cup chicken stock

1 whole clove

bay leaf

3 cups diced, cooked chicken

cup raisins

cup slivered almonds, minced

cup sherry

3 egg yolks, lightly beaten

cup heavy cream

8 pieces toast, buttered

1. Melt 2 tablespoons of the butter over medium-high heat and stir in flour. Gradually stir in milk and stir until mixture boils and thickens; then cook about 3 minutes longer, stirring occasionally. Add salt and pepper. Place over hot water to keep hot, and cover tightly to prevent crust from forming on top. …
