NORTHERN Quarter bar Cane And Grain has turned its upstairs speakeasy into a covert cocktail lab.

The former First Floor Bar has had a rebrand to become Science And Industry, complete with its own chemistry workshop where Massimo Zitti and his team are pushing the boundaries of molecular mixology in Manchester. Kitted out with equipment including a rotary evaporator, it enables them to do everything from redistilling rum with fresh watermelon juice to go in a dry iced zombie to creating edible orange perfume to be spritzed on a negroni ristretto.

"We can play with every single ingredient," said Massimo, bar manager and head trainer for The Liars Group, which owns the Thomas Street bar along with The Liar's Club and Crazy Pedro's in Bridge Street.
