They may not look perfect or beautiful, but what heirloom tomatoes sacrifice in beauty they more than make up in taste. Heirlooms -- tomatoes that are genetically unique (non-hybrid) -- have become more popular in recent years.

For good reason, according to Hackensack resident Rochane Green (above), chef at Biddy O'Malley's in Northvale. "I love to see them throughout the summer," Green said. "They have such great flavor. They're sweeter and fleshier than regular tomatoes."

They're also more expensive. "I know, but they're worth it," Green said. He gets his heirlooms at Stokes Farm in nearby Old Tappan.

Green says he never cooks heirloom tomatoes. "I don't like to overpower them," he said. But he does love to use them fresh in salads and in the gazpacho recipe that follows. …
