Across the pond in England, sage is considered an essential herb, as are parsley, rosemary and thyme. Ergo, the English folk song "Scarborough Fair." And while it may not be considered a must here, many chefs and home cooks love its earthy, slightly peppery flavor and many use it in casseroles, sauces, sausages, stuffing and, of course, the popular Italian veal dish known as saltimbocca.

Chris Tarta, owner and chef at Due-South Broad Bistro in Ridgewood, is a fan of the herb, especially this time of the year. "I don't use it year-round," Tarta said. "I use it early to mid fall." To Tarta, sage "has a fall taste, a specific flavor that says farm-fresh fall morning."

He uses it in many sauces, including a brown butter sauce with which he bathes hearty butternut squash ravioli. It goes well too with sweet potato gnocchi, dark meat chicken or salmon fillet, he said. …
