This week at area farmers markets, look for pumpkins, sweet corn, winter squash, watermelon, okra, sweet peppers and hot peppers, cured garlic, cantaloupes, peaches, blackberries, raspberries, assorted salad greens, bok choy, romaine lettuce, head lettuce, onions, tomatoes, local honey, local free-range eggs, duck eggs, mushrooms, carrots, radishes, kale, Swiss chard, arugula, beets, kohlrabi, fennel, green beans, cabbage, potatoes, scallions and a variety of herbs. SPICY BASIL EGGPLANT

Yield: 4 servings

1 large purple eggplant or 2 Thai or Japanese eggplants

1 tablespoon oil

2 cloves chopped garlic

2 chile peppers or to taste, sliced

1 cup water

2 tablespoons fish sauce, see note

1 tablespoon granulated sugar

Leaves from 1 bunch Thai basil or sweet basil
