There are many reasons to love goat cheese. Among them: Goat cheese is lower in fat, calories and cholesterol than cow's and sheep's milk cheese, yet it has a wonderfully rich, creamy taste. And while there may be hundreds of cow and sheep cheeses to choose from, in the variety department, goat cheese is no slacker. Goat cheese not only comes in many shapes - round, cone, log-like and even wheel - but a variety of textures, including soft, crumbly and firm. And taste: from subtle to pungent.

Peter Loria, owner and chef of the charming four-star restaurant Cafe Matisse in Rutherford, is a huge goat cheese fan. In fact, Loria says he always has goat cheese "in some form" on his menu.

"There are so many uses for goat cheese - in salads, ravioli, dumplings, cheesecake," Loria said. It was even an ingredient in his well-loved Matisse burger - he topped the meat with goat cheese mousse. …
