3 large eggs

cup whole milk

cup all-purpose flour

teaspoon kosher salt

teaspoon vanilla

2 tablespoons unsalted butter, clarified

2 ounces serrano ham, julienne cut in thin slices

teaspoon fresh thyme

1/3 cup maple syrup

Notes: Don't substitute 2-percent or skim milk for this recipe.

* Be sure to use clarified butter. It has a higher smoke point than regular butter to prevent burning or smoking during the bake. There are good tutorials and instructions online that show how to make clarified butter.

1. Preheat oven to 425 degrees. Place a 10-inch cast-iron skillet or oven-proof baking dish in the oven to preheat.

2. Combine eggs, milk, flour, salt and vanilla and blend, either with an immersion blender or in a regular blender, to make the batter. Blend just until smooth with no lumps. …
