The Wellington Restaurant and Club has opened at the Richmond Suites hotel with the goal of providing fine dining at a reasonable cost, said General Manager Kurt Fischer.

Fischer and his wife Nancy, who also manages the restaurant, project sales of $750,000 by the close of 1990.

"I like to hope this will be one of the better restaurants in town," said Kurt Fischer, who believes in "good food, good service, harmony and a clean and friendly environment."

"Growth of Oklahoma's economy is slow - but coming," he said.

About 12 employees have begun working at the restaurant, but that number should swell to 18 within about six months as business picks up, said Fischer, who managed the Beacon Club for 14 years.

The 6,500-square-foot restaurant, which seats 100 people, is located at 1600 Richmond Square in the 1600 block of Northwest Expressway. It serves breakfast, lunch and dinner, and offers Sunday brunch from 11 a.m. to 2 p.m.

"We would like to reach the young, middle-aged and old," he said, with a medium-priced menu abundant with healthful, low-cholesterol entrees ranging from escargot or rack of lamb to steaks, fresh fish of the day or fowl.

Customers also can whet their appetites by choosing from a variety of Wellington dishes, including Beef Wellington and Red Snapper Wellington.

English bread pudding with whiskey sauce, ice cream and sherberts are served for dessert.

"In the restaurant business today, we have to rely on better marketing than in the past," Fischer said. "Everybody in the U.S. is on a health kick, so we have to develop menus to meet their tastes."

Fischer noted that alcohol consumption in America has dropped one third from five years ago, and in Oklahoma, the decrease has been even greater.

To make up lost revenues from dropping liquoir consumption, he said restauranteurs need to promote quality products at a good price while maintaining consistency. …
