2 tablespoons vegetable oil

1 large onion, thinly sliced

1 green chili, finely chopped

2 cloves garlic, finely chopped

1 red bell pepper, diced

4 tablespoons butter

6 tablespoons flour

3 tablespoons Madras curry powder

2 tablespoons garam masala

5 cups chicken or beef stock

4 tablespoons soy sauce

4 tablespoons ketchup

4 portions udon noodles

5-ounce can sweet corn

2 spring onions, finely sliced

4 eggs, poached or soft boiled and cut in half

Pinch red chili flakes, pickled ginger and toasted sesame seeds for garnish

Heat oil in saucepan over medium heat and add onion. Cook until lightly browned then add chili, garlic and red pepper. Continue to cook until garlic has softened and pepper has started to brown. …
