Portabella mushrooms work well here, but if you can lay your hands on local morrels, it is even better. Either taleggio or limburger can be used for this sandwich as they have similar characteristics - both are semisoft cheeses with a washed rind.

8 ounces mushrooms, thickly sliced

1 onion, sliced

½ tablespoon thyme leaves

2 tablespoons olive oil

Salt and freshly ground black pepper to taste

4 slices sourdough bread

3 ounces taleggio, sliced

Thyme Butter

½ tablespoon thyme leaves

½ garlic clove, grated

2 tablespoons butter, at room temperature

Preheat oven to 400 degrees.

Scatter mushrooms and onion on a baking tray. Sprinkle with thyme, drizzle with olive oil and season with salt and pepper.
