Basic Yellow Cake

Use this cake for many variations. Use either an 8-inch square or 9-inch round pan. The cake freezes well.

1 cup flour

1 teaspoon baking powder

½ teaspoon fine salt

½ cup whole milk

1½ tablespoons butter

½ teaspoon vanilla extract

2 large eggs

1 cup granulated sugar

Preheat oven to 350 degrees. Grease and flour (or spritz with baking spray) an 8-inch square or 9-inch round pan. Line pan with a square or round of parchment paper.

In small bowl, combine flour, baking powder and salt. In small sauce pan, add milk and butter, and bring to a boil. Remove from heat and add vanilla.

In mixing bowl, beat eggs until frothy. Add sugar, beating at high speed until mixture is thick and lemon-colored. Whisk in dry ingredients just until white patches disappear; do not over stir. Add hot milk mixture and mix to combine. …
