Chicken salad is a perfect Mother's Day dish because it's easy to make, and so versatile. This recipe trades a creamy green goddess dressing for the traditional mayonnaise. You can spread it between two slices of bread or as an open-faced sandwich. I added toasted sliced almonds for extra crunch.

For dressing

1 avocado, pitted and peeled

1 cup fresh spinach

? cup plain Greek yogurt

? cup mayonaisse

¼ cup chopped fresh parsley

¼ cup chopped fresh basil

1 tablespoon snipped fresh chives

2 cloves garlic

Juice ½ lemon

Salt and ground black pepper

For sandwich

1 cup shredded chicken breast

Snipped chives or scallions, optional

2 slices bread, toasted if desired

Fresh microgreens or arugula, for topping

Make dressing: In food processor, combine avocado, spinach, yogurt, mayonnaise, parsley, basil, chives, garlic, lemon juice and salt and pepper to taste. …
