Strawberry Almond Mascarpone Tart

This pretty strawberry tart looks extra special, but thanks to a no-bake crust, it's actually very easy to make. No wonder it's one of the most popular recipes on Jessica Merchant's website, How Sweet Eats.

For crust

¾ cup graham cracker crumbs

¾ cup almond meal

5 tablespoons unsalted butter, melted

3 tablespoons almond butter, melted

For filling

12 ounces mascarpone cheese, at room temperature

¼ cup powdered sugar

1 teaspoon almond extract

2 pints strawberries, cut into roses if you're feeling fancy

1 tablespoon honey

3 tablespoons sliced almonds

1 handful fresh mint leaves

Make crust: In bowl, stir together graham cracker crumbs, almond meal, butter and almond butter until combined and all the crumbs are moistened. Press the crust into a 14-by-4-inch tart pan, pressing it up along the sides until packed. …
