Spicy Grilled Shrimp Toast

Avocado toast is hotter than ever. This version is made on the grill with marinated shrimp and thick slices of peasant bread.

¼ cup olive oil, plus more for grilling the bread

½ teaspoon ground coriander

½ teaspoon crushed red pepper flakes

Zest and juice of 1 lime

1 pound medium shrimp, peeled and deveined

2 avocados, halved, pitted and peeled

1 garlic clove, minced

1 large tomato, diced

2 tablespoons finely chopped fresh cilantro

1 jalapeno, minced

Dash hot sauce

Pinch or two of cumin

Kosher salt

1 loaf peasant bread, cut into ½-inch thick slices

Preheat grill to high.

In medium bowl, whisk together olive oil, coriander, pepper flakes and lime zest. Add shrimp and toss to coat. Cover and refrigerate until needed, but no longer than 8 hours.
