Hanger Steak with Mushroom Sauce

Chef Mike Guiliani's hanger steak recipe is simple, inexpensive and honestly delicious. Don't tell my husband, but it's what he's getting for Father's Day.

2 pounds hanger steak

1 tablespoon salt (or enough to cover both sides of the steak)

1 tablespoon pepper (or enough to cover both sides of the steak)

2 tablespoons olive oil

4 cups assorted mushrooms, sliced

1 sprig fresh rosemary, chopped

1 cup dry red wine

¾ cup chicken stock

2 tablespoons fresh tarragon, chopped

3 tablespoons unsalted butter

4 handfuls fresh arugula

Rub steak with salt and pepper and allow to sit at room temperature, about 30 minutes.

Combine olive oil, mushrooms and rosemary in large skillet and cook until mushrooms are tender, about 7 minutes. …
