Tomato Soup with Inside-Out Grilled Cheese

This recipe comes together in less than a half-hour and is perfect for those nights when you eat dinner in front of the television.

For soup

1 teaspoon olive oil

1 garlic clove, minced

1 cup chicken broth

1 (15-ounce) can diced tomatoes

Salt to taste

Red pepper flakes, optional

For sandwich

2 slices bread

Butter for spreading and coating

½ cup (4 ounces) shredded cheese, divided

Make soup: Heat oil in small saucepan over medium heat. Add garlic and cook 30 seconds, stirring constantly. Add broth, tomatoes, salt and red pepper flakes, if using, then bring to a boil. Lower heat, then simmer for 20 minutes. When tomatoes have completely broken down, use immersion blender to blend until smooth or place them in a blender and blend until smooth. …
