Black beans pack in as much protein as hamburger but cost so much less. If you've got any fresh herbs or hot peppers, dice and throw them in, too, along with any spices you might have. I like to top the burgers with diced tomato, with red pepper flakes sprinkled on top.

1 (15-ounce) can black beans, rinsed and drained

1 cup cooked rice

1 cup frozen mixed vegetables, thawed and drained

½ small onion, minced

1 egg, lightly beaten

? cup breadcrumbs

Dash of Sriracha or hot sauce

Salt and pepper, to taste

1 tablespoon oil

Shredded fresh spinach, for serving

Chopped tomatoes, for serving
