Green Tomato Relish

Sweet and just a little spicy, this is great on grilled sausages or chicken, or with cheeses. I used homegrown sweet red 'Carmen' peppers, but red bell peppers work, too. Hot banana peppers are easy to find but in their place you could also add one or two large jalapenos with their seeds.

1½ pounds coarsely chopped green tomatoes (4 cups)

1½ cups coarsely chopped sweet onion

1 cup chopped sweet red pepper

Scant ¼ cup coarsely chopped hot banana peppers

4 teaspoons kosher salt

¾ cup cider vinegar

½ cup granulated sugar

2 teaspoons mustard seeds

1 teaspoon ground ginger

In large bowl, mix green tomatoes, onion, sweet red pepper, banana pepper and salt. Cover and refrigerate 2 hours or overnight. Drain, reserving the liquid.
