Onion, Apple and Cheese Gratin

With the change in temps this weekend, it finally feels like fall. And fall means apple season. Here's a different way to celebrate the season.

3 large onions, chopped (about 4 cups)

2 medium Granny Smith apples, cored and chopped (about 2½ cups)

2 tablespoons canola oil

½ teaspoon dried thyme, crushed

½ teaspoon salt

¼ teaspoon crushed red pepper

¼ teaspoon ground black pepper

Softened butter for casseroles

1 cup torn crusty bread

½ cup shredded Gruyere cheese, divided

½ teaspoon dried sage, crushed

¾ cup heavy cream

Toasted or grilled bread, for serving

Preheat oven to 425 degrees. Place onions, apples, oil, thyme, salt, crushed red pepper and black pepper in a large baking pan. Toss to combine. Roast until browned and very tender, 20 to 25 minutes. …
