The fried dough will not have a smooth surface, so don't freak out about its appearance like I did when I removed the first fried batch from the wok.

2½ cups all-purpose flour

¼ teaspoon baking soda

¼ teaspoon baking powder

½ cup yogurt

? cup ghee (clarified butter)

2 cups sugar

1 cup water

2 tablespoons chopped pistachios and almonds for garnish

In a large bowl, mix flour, baking soda and baking powder with your fingers. Add yogurt and mix. The dough will be crumbly. Add ghee and knead the dough well by hand.

Wrap dough in plastic wrap and let it sit for 30 minutes. While dough is resting, make the sugar syrup.

In a pot, add sugar and water, and bring to a boil. Reduce heat, and cook syrup until it has the consistency of one thread when you stretch it with a ladle. …
