Lemony Chicken Soup for the Busy Winter Soul

Over the holidays, a big pot of chicken soup on the stove will keep everyone nourished and stop them from filling up on Christmas cookies.

Lemon adds a citrusy finish to this easy recipe. I use fat, flat egg noodles to make the soup more substantial, but fine noodles would work, too.

2 tablespoons olive oil

1 yellow onion, chopped

2 garlic cloves, minced

2 carrots, sliced diagonally

1 cup diagonally sliced celery

3 fresh sprigs thyme

? teaspoon black pepper

1¾ teaspoons kosher salt

8 cups chicken broth

8 ounces uncooked regular or whole-wheat egg noodles

2 cups shredded chicken

2 lemons, zested and juiced

2 tablespoons chopped fresh parsley
