The marinade uses both sweet and smoky paprika for extra depth of flavor in this fuss-free vegetarian dish.

1½ cups Greek yogurt

6 tablespoons olive oil

2 tablespoons sweet paprika

1 teaspoon smoked paprika

1 tablespoon plus 1 teaspoon garam masala

2 teaspoons ground turmeric

1 teaspoon salt, plus extra to taste

2 teaspoons agave syrup or honey

¼ teaspoon cayenne pepper, or more to taste

1 cauliflower, divided into florets

Preheat oven to 400 degrees.

Whisk together yogurt, olive oil, spices, salt, agave syrup or honey and cayenne pepper in a bowl until smooth.

Rub cauliflower florets with half the marinade and arrange them in a single layer in a large ovenproof dish. Bake cauliflower for 45 to 50 minutes, or until tender. …
