Olive trees in various parts of the Arab world date back thousands of years, and many still bear fruit. This is a fitting image for a discussion of our history. Olive trees represent our long connection to our land and culture. Thus, one of the violations committed by the Israeli army/government upon the Palestinian people, the uprooting of centuries-old olive trees, is horrific. Those trees represent Palestinian connection to the land, as well as their livelihood and culture.
3-4 large tomatoes
3-4 green onions
1 bunch mint
salt and pepper
Cut the tomatoes and cucumbers into chunks. Mince green onions and mint. Mix together. Add salt and pepper to taste. Pour olive oil over salad. Let it marinate for at least one hour. Taste again, in case you need to add more salt or oil.
Tomatoes fresh out of the garden are best. Also, extra virgin olive oil makes a big difference. Eat with Syrian bread.
The simplicity of this salad—flavored mostly with the taste of olive oil-makes it special.
