Grilled Watermelon and Tomato Salad

Serves 10 to 14 * Prep Time 10 minutes, plus 1 hour chilling time * Cook Time 6 minutes

watermelon is often the afterthought, served come dessert time. in this recipe, it grills up as the star player to kick offthe meal.

Make-Ahead Tip you can prep this recipe through step 3 up to a day in advance. Store the cooked, cut-up watermelon in a covered container in the fridge until ready to use.

Salt

1 small watermelon, sliced into 1¼-inch-thick rounds

½ cup extra-virgin olive oil

1¾ pounds tomatoes, cut into 3-inch cubes

1 small red onion, halved and thinly sliced

½ cup red-wine vinegar

1 tablespoon sugar

¼ cup thinly sliced fresh basil

Freshly ground black pepper

½ cup crumbled feta cheese

1 Preheat the grill or prepare a charcoal BBQ. generously salt both sides of each watermelon slice. Set slices on a wire rack resting over a rimmed baking pan for 15 minutes.

2 rinse salt from watermelon and pat the fruit dry with paper towels. use 1 cup of the oil to brush both sides of watermelon pieces, then place them on the grill. cook until grill marks appear, about 3 minutes on each side. remove watermelon from the grill, trim and discard the rind, and cut fruit into 1-inch cubes, picking out as many seeds as you can.

3 in a medium bowl, combine watermelon, tomatoes, onion, the remaining oil, vinegar, sugar and basil. Season with salt and pepper to taste, cover the bowl, and refrigerate 1 hour. Sprinkle feta cheese over the top before serving.

BBQ 101

Direct vs. indirect Heat

There are two ways to cook with fire. Quick-cooking foods like burgers, seafood and more delicate veggies need direct heat, meaning the food is placed right over the heat source. Meats that require longer cooking times like whole chickens, pork butt and brisket need indirect heat to make sure they're cooked through. For this method, the coals are set to one side of the grill to create an oven effect that slow-roasts the meat.

timing is everything

Don't forget BBQs need preheating, just like an oven. Charcoal briquettes are ready when they turn from black to a white-ash color, about 20 minutes after you light them. Gas grills heat up faster, with just 10 minutes to cook time (make sure to keep the grill closed while it's heating).

The Perfect Burger

Serves 6 * Prep Time 5 minutes * Cook Time 7 to 10 minutes, depending on preferred doneness

the trick to a moist, flavorful burger begins with the meat you choose. the butcher at most supermarkets will gladly grind the brisket and short ribs-you just have to ask. these burgers get added zip with a touch of spices like ginger and paprika.

1 pound beef brisket, ground

½ pound boneless beef short ribs, ground

½ pound ground sirloin

¾ cup soy sauce

1 teaspoon sugar

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground ginger

1 teaspoon paprika

Salt and black pepper to taste

6 slices sharp cheddar cheese

6 burger buns

2 tablespoons butter

1 mix ground meats together in a deep bowl, divide into 6 balls, and shape into patties.

2 Preheat the grill or prepare a charcoal BBQ. in a small bowl, whisk together soy sauce, sugar and spices (except for salt and pepper).

3 Season the patties with salt and pepper. Place them on the grill and cook 3 to 5 minutes on each side, basting with the soy sauce glaze every couple of minutes. top each burger with a slice of cheese for the last minute of cooking.

4 lightly butter the inside of buns and place them on the grill, buttered side down, grill lid open. cook 30 seconds or until light brown and toasted. Place a burger on each bun, top with desired fixings-even bacon!-and serve.
